Macabeo is a semi-sweet white wine made from Macabeo with a crisp aromatic profile and an enveloping palate, sustained by freshness and persistence: designed for enjoyment and creative gastronomic pairings. HIGH-ALTITUDE VINEYARD Vines at 1,200 m in Laujar, in the Alpujarra region of Almería. PRODUCTION AND AGING Harvest in 15 kg boxes, meticulous selection, skin maceration in press, and fermentation at controlled temperature (≤15°C). Fermentation is halted leaving 10 g/L of sugars; aging on lees for 2 months. TASTING NOTE Bright pale color. Aromatic intensity with tropical fruit, fennel, and floral undertones. Rich, enveloping, and highly persistent palate, with floral and fruit notes returning on the finish. SERVICE AND PAIRING Serve well chilled. Excellent with appetizers, mild Asian cuisine, creamy cheeses, and seafood.
